Combination Fried Rice Recipe

combination fried rice

Ingredients:

  • 3 cups cooked rice (preferably chilled)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 1 cup cooked chicken, diced
  • 1 cup cooked shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • Spring onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Ensure the rice is cooked and preferably chilled. This helps in preventing the rice grains from sticking together when frying.
    • Chop the garlic, onion, and any other vegetables if not already done.
    • Cook and dice the chicken. Peel and devein the shrimp.
  2. Heat the Oil:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Saute Aromatics:
    • Add the minced garlic and chopped onion to the skillet. Stir-fry for about a minute until fragrant.
  4. Cook Eggs:
    • Push the garlic and onion to one side of the skillet, then pour the lightly beaten eggs into the empty space. Allow them to cook undisturbed for a few seconds until they start to set, then scramble them until fully cooked.
  5. Add Vegetables and Protein:
    • Add the mixed vegetables, cooked chicken, and shrimp to the skillet. Stir-fry for a couple of minutes until the vegetables are tender and the proteins are heated through.
  6. Add Rice:
    • Add the cooked rice to the skillet. Break up any clumps with a spatula and stir-fry to evenly distribute the ingredients.
  7. Season:
    • Drizzle the soy sauce and oyster sauce over the rice mixture. Season with salt and pepper to taste. Stir well to combine, ensuring the sauces are evenly distributed.
  8. Finish and Serve:
    • Continue stir-frying for another few minutes until everything is heated through and well combined.
    • Garnish with chopped spring onions and sesame seeds if desired.
    • Serve hot as a delicious main course or side dish.
