Recipe for Delicious Grilled Chicken Spring Rolls

Ingredients:

For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste

For the Spring Rolls:

  • 8 rice paper wrappers
  • 2 cups cooked vermicelli noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup fresh bean sprouts
  • Fresh cilantro leaves
  • Fresh mint leaves
  • 8 lettuce leaves

Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons water
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce
  • Sriracha sauce (optional, for heat)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine minced garlic, soy sauce, fish sauce, honey, lime juice, sesame oil, salt, and pepper.
    • Place chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  2. Grill the Chicken:
    • Preheat your grill or grill pan over medium-high heat.
    • Remove the chicken from the marinade and grill for about 6-8 minutes per side or until cooked through. Let it rest for a few minutes, then slice it thinly.
  3. Prepare the Dipping Sauce:
    • In a small bowl, whisk together hoisin sauce, peanut butter, water, lime juice, and soy sauce. Add Sriracha sauce if you want it spicy. Set aside.
  4. Prepare the Rice Paper Wrappers:
    • Fill a large bowl with warm water.
    • Dip one rice paper wrapper into the water for about 15 seconds or until it becomes pliable.
    • Lay the softened wrapper flat on a clean surface, like a plate or a damp kitchen towel.
  5. Assemble the Spring Rolls:
    • Start by placing a lettuce leaf in the center of the wrapper.
    • Add a small handful of cooked vermicelli noodles over the lettuce.
    • Top with sliced grilled chicken, julienned cucumber, carrot, red bell pepper, bean sprouts, fresh mint leaves, and cilantro leaves.
  6. Roll the Spring Rolls:
    • Fold the sides of the wrapper over the filling.
    • Begin rolling from the bottom, tucking in the sides as you go.
    • Roll tightly but gently to avoid tearing the wrapper.
    • Repeat with the remaining ingredients.
  7. Serve:
    • Slice each spring roll in half diagonally.
    • Serve with the prepared dipping sauce.
