How to Make Spring Rolls

Spring rolls

Spring rolls, besides the meat, also combine more vegetable ingredients to make the dish more delicious, not to be eaten. Pork along with shrimp, carrots, mushrooms, onions, beans, vermicelli… is the most popular spring roll filling because the ingredients are easy to find and affordable for all Vietnamese people.


  • 25-30 pcs rice paper/ spring rolls/ pia rice paper
  • 250-300 ml of cooking oil

Ingredients for Making Spring Rolls

  • 300g minced shoulder meat
  • 100g fresh shrimp
  • 1 large carrot
  • onion
  • 100g price
  • ½ bean sprout/ kohlrabi
  • 100 g of vermicelli
  • 50 g of wood ear
  • 50g shiitake mushrooms
  • 3 branches of fresh onions
  • 2-3 eggs
  • 1 teaspoon seasoning/monosodium glutamate
  • ½ teaspoon ground black pepper

Ingredients for Dipping Sauce

  • 2 tablespoons fish sauce
  • 2 tablespoons white sugar
  • 2 tablespoons vinegar
  • 10 tablespoons warm water
  • 1 tablespoon minced garlic
  • 1-2 minced chili
  • ½ teaspoon ground black pepper


Step 1: Prepare Ingredients for Spring Rolls

  1. Choose a good quality pork shoulder, wash and mince it.
  2. Fresh shrimp peeled, removed the head, tail, back and then washed. Then mince the shrimp and marinate a little salt so that the raw shrimp does not go rotten.
  3. The vermicelli, wood ear, and shiitake mushrooms are washed and soaked until soft.
  4. Finely chop the wood ear and shiitake mushrooms. Thai vermicelli is about 2cm long.
  5. Carrots and tubers are washed, peeled and sliced. Rack washed, drained.
  6. Onions, scallions after peeling, cutting roots, washed, then cut into pea-sized pieces. The price is only used to rub 2-3 times.

Step 2: Mix and Marinate Spring Roll Ingredients

  1. Put all the chopped meat, vegetables, and root ingredients in the mixing bowl.
  2. Add seasoning spices, monosodium glutamate, and pepper to the bowl.
  3. Crack 2 eggs into the mixing bowl.
  4. Mix well with chopsticks or hands wearing nylon gloves. If the filling is still fragmented and dry, add 1 more egg.
  5. After mixing, let the filling rest for about 5-10 minutes to let the flavors infuse.

Step 3: Roll Spring Rolls

  1. Scoop about 1.5 tablespoons of the mixed spring rolls into the spring rolls or pia rice paper and roll them up into spring rolls.
  2. Continue rolling the spring rolls until the filling is exhausted.

Step 4: Fry Spring Rolls and Done

  1. Place the pan on the stove and pour in the oil slowly so that the oil covers at least half of the spring roll.
  2. When the cooking oil is hot, use chopsticks to pick up each spring roll into the pan.
  3. Fry the spring rolls for the first time until the crust is light golden, then remove and let cool.
  4. Fry a second time until the spring rolls are golden brown, when picked up, they have a crunchy feeling.

Step 5: Make Dipping Sauce and Enjoy

  1. Dissolve fish sauce, white sugar, vinegar in warm water.
  2. Add minced garlic, minced chili, and black pepper.
  3. Taste the dipping sauce to taste and enjoy with spring rolls.
